If the Sahara is your priority, Fes is the smartest place to begin. Merzouga is about 460 km to the south, a single day's drive, so even a two-day trip includes a real night among the dunes of Erg Chebbi.
The road is beautiful in its own right. You climb through Ifrane, a mountain town of pitched roofs and gardens, and the cedar forest near Azrou, where Barbary macaques live, then cross high plateaus to Midelt before descending into the Ziz Valley, a canyon of red rock and date palms.
From Merzouga you can return to Fes, or continue west through the Todra Gorge, the Dades Valley and Aït Benhaddou to finish in Marrakech, seeing both imperial cities and the whole of the south in one journey.
